After the Long Winters Nap, the lush blanket that covers the earth we walk on is coming alive with so many colors and new life every where I look. I look for the tinniest little plants along the path in the woods. Plants that I have never seen before because they are so small.
The dandelions are seeding out already with their little umbrellas that will carry them to start new plants. I watched someone make dandelion honey the other day. It looked very easy. I may have to give it a try.

The Spring is a beautiful time to watch the landscape wake up again. Just ten days ago, there were freeze advisories and now the colors compete with one another and the grass is lush and bright green. Nature seems so fickle, yet a constant in our lives.
Yes, and with the rain we are finally getting, the wild flowers are popping up everywhere.
Yes, the rain is good for those flowers and hopefully will help take care this moderate drought we have. We are getting a lot of rain beginning tomorrow late day and continuing through Wednesday. I hope it’s done by Memorial Day Weekend.

Yes, I had never heard of the honey either. I watched a young girl make some. She took the yellow petals off of the dandelions and soaked them in water, then she squeezed all the water out of the petals and put it in a saucepan with sugar and cooked it until it thickened. It looked just like honey.

Dandelion honey?! What do you mean?
I watched her pick dandelions and pull all the yellow parts off. She then soaked them in water, strained all the juice from the yellow parts and then cooked it, I am sure she added sugar at this point. I have to look up the exact recipe. And it thickened as she cooked it, just like honey. This person put its leaves in salad and made tea out of the roots. She uses the whole plant.
I knew about the salad and tea thing, but not about the honey. I wouldn’t try it though. The leaves in the salad are kind of bitter. So I’m skeptical.
That is what I am wondering. You add sugar to anything and it will probably taste better.
